Ok here we go. My final Valentine’s Day recipe, the Raspberry Lemon Drop Cocktail!

First off, I’ve been stuck on this couch since Wednesday. I caught the worst flu that I’ve had in years. It’s AWWWFUL! Fever for three days, aching everywhere, stomach is rebelling, falling asleep every other second, feel like I’m dreaming all day, the works ????????????. Although since I’ve been stuck in the living room, I have been able to binge the entirety of This Is Us on tv. Always a silver lining right?

Anyway, better get to this raspberry lemon drop cocktail before I lose all focus and fall asleep on the couch again. Oh and if you’re wondering, This Is Us is definitely on in the background .

The lemon drop. It’s a classic right? Sour and sweet at the same time, with quite a kick! But I gotta say, I’m not much of a vodka person. Bummer too because it seems like all the fun drinks at happy hours are vodka based. However, I think I’ve finally found a vodka cocktail I can get behind!

A couple weeks ago, I went up to Anacortes to visit the fam and it was beautiful and awesome as always. While I was there, I happened to meet a wonderful friend of my Mom’s, Diane, who had us over for a little happy hour. She made us some FAB gin drinks which I can promise you will make an appearance here on the blog soon. Diane also introduced me to the absolute miracle that is berry based liqueur. Turns out, her sister owns over in Langley where she bottles not only de-licious whiskey but all kinds of !

I was going to go out there this weekend and check it out but THANKS to this flu, I couldn’t move from the couch. Luckily though, Diane told me a great drink recipe for the Whidbey Island Distillery’s raspberry liqueur. Any guesses?? Yup! The raspberry lemon drop cocktail ????.

Perfect for date night, the raspberry lemon drop cocktail is the simplest of simple drinks. 3 ingredients, shaken, strained into a martini glass. I added a little red sugar and silver decorating sugar to the rims of my glasses to add some festive flair ????. Now normally a lemon drop has triple sec and simple syrup, but the raspberry liqueur is sweet enough that you don’t need either of them! It also adds all the color you’re looking for in a valentine’s day beverage. Festive, quick, simple, and SO good!

That’s about as much as my brain can handle at the moment. I think I’m gonna go crawl back to my spot on the couch. All caught up on This Is Us so any thoughts on a new show to binge? Slash any favorite Valentine’s Day cocktails or treats with raspberry liqueur? Let me know in the comments!

Raspberry Lemon Drop Cocktail

---------------------------------------------------------------

- 1 ounce freshly squeezed lemon juice*

---------------------------------------------------------------

- Optional: Rub the rim of a martini glass with a lemon wedge and coat with sugar. Place a couple raspberries in the bottom of the glass.

- Add all ingredients to a shaker over ice. Shake and strain into glasses. Serve immediately.

I used regular Skyy vodka but if you want to turn this cocktail up a notch, the recipe originally uses vanilla vodka for extra flavor.

Freshly squeezed lemon juice makes all the difference!
